Blue Collar BBQ & Arts Fest

Kansas City BBQ Society Certified Judging and Table Captain Class

The Minnesota Barbeque Society will be hosting a Judge’s and Table Captain’s class on March 12, 2016 at The University of Minnesota Meat Science Lab Main Auditorium Room 125, 1354 Eckles Ave, Falcon Heights(St Paul) MN 55108.

Judge’s Class will have sign in starting at 9am with class starting at 10am and ending about 2:00pm. The cost of the class is $70.00 for KCBS Members in good standing or $105.00 including a one year membership to KCBS.

Table Captain’s Class will have sign in about 2:30pm with Class starting at 3:00pm and ending about 5pm. The cost for this class is $45.00 for KCBS Members in good standing or $80.00 including a one year membership to KCBS.

If you enjoy barbeque and would like to be part of Minnesota’s finest organization you should join the Minnesota Barbeque Society. (To take the class it is not required to be a member of MBS) but we do strongly encourage you to become part of the local BBQ happenings!

Spring Training Workshop

The Minnesota BBQ Society is pleased to join the University of Minnesota Meat Science Department once again to offer the BBQ Spring Training Workshop on April 9, 2016 in the Andrew Boss Laboratory of Meat Science. This full day program is packed with lectures and demonstrations provided by meat scientists, industry professionals, and Minnesota BBQ Society competition pros. This year our Keynote Speaker is Dave Anderson “America’s Rib King” of Old Southern BBQ Smokehouse. He is known for inspirational talks, and has many life experiences to share! The workshop contains something for everyone, from the amateur backyard cook to seasoned competition chefs. Your registration for the workshop includes a binder full of all the presentations, a University of Minnesota Meat Science hat and apron, breakfast refreshments, BBQ lunch, and product tastings, all for a reduced registration rate of $135 per person. The entire program will take place in the Andrew Boss Laboratory of Meat Science on the St. Paul Campus of the University of Minnesota. The day begins with a very informative tour of the Meat Lab; the University grows their own stock and slaughters on site. There is also a retail shop where the University’s own meats, sausages, cheeses and amazing ice cream are available for sale.

The event registration is at 7:30 AM including a tour of the lab. The formal workshop starts at 8:30 AM ending around 5:00 PM.

  •  A discussion of meat science basics as well as a demonstration

Competition Team Cooking

  •  Low and Slow vs. Fast and Hot

The Science of Cooking

  •  Understanding what happens to the product when you are cooking it

Barbeque Showcase

  • An extended lunch hour gives all participants an opportunity to interact with BBQ teams and sample their winning recipes

Cooking for a Team

  • A competition BBQ team discusses the basics of a contest

Dave Anderson “America’s Rib King”

  • Dave will walk through his variety of experiences from competition to the restaurant business

The Right Equipment for You

  • The variety of equipment available to the backyard hobbyist and competition team

Sausage Fundamentals

  • The basics of how to make sausage at home, Dr. Jeff Sindelar from UW Madison
